What to do with champagne
What should you do with champagne? Not a trick question - the answer is to drink it.
With very few exceptions and those debatable, champagne is a wine best enjoyed sooner rather than later. The fact that it’s expensive doesn’t mean that you should squirrel it away for your grandchildren as you might a very fine or rare red wine that needs to age before drinking.
We do have some vintage champagnes (made from the fruit of a single, exceptionally good harvest) on the shelves that are ten or more years old. They’re still very good to drink, with the complex, mature flavours that are to some people’s taste, but surprising and unfamiliar to many.
My advice in general is that champagne is for right now, or as soon after right now as you can justify. Don’t hold on to that bottle for ever: do your bit for the economy and your spirits - open it up, enjoy it, and start again with the pleasure of choosing the next one.
